Provola Matured is a stretched curd cheese made from Sicilian cow’s milk, produced according to tradition and matured for a minimum of two months.

The hand-processing of the cheesemaker causes, in the maturing phase, the appearance of the characteristic cracks in the paste of this cheese: hence the name “provola flake” or “provola flake”. Compared to other provola cheeses, fresh or semi-mature, this one has a more savory flavor and a more compact texture, marked by holes.

Ingredients: pasteurized MILK, rennet, salt and lactic ferments.

Origin of the milk: Italy – 100% Sicily
